Ingredients
– 500 g leftover turkey, shredded
– 2 tbsp oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 tbsp ginger, grated
– 2 cups coconut milk
– 2 tbsp curry powder
– 1 tsp salt
Method
1. Heat the oil in a large pan over medium heat.
2. Add the chopped onion and cook until soft.
3. Stir in garlic and ginger, cooking for about a minute.
4. Mix in the curry powder, followed by the coconut milk and shredded turkey.
5. Allow it to simmer for 10 minutes, then season with salt.
