Delicious Leek And Potato Soup Recipe For Comforting Meals

Ingredients

– 3 medium leeks, cleaned and chopped
– 3 medium potatoes, peeled and diced
– 1 onion, chopped
– 1 garlic clove, minced
– 1 liter vegetable broth
– 250 ml milk
– 50 g butter
– Salt to taste
– Pepper to taste
– Chives, chopped (for garnish)

Method

1. Melt the butter in a large pot over medium heat.
2. Add the chopped leeks, onion, and minced garlic. Cook for about 5-7 minutes until softened.
3. Stir in the diced potatoes and pour in the vegetable broth. Bring the mixture to a boil.
4. Reduce the heat and simmer for around 20 minutes, until the potatoes are tender.
5. Use a blender to purée the soup until smooth. Stir in the milk, then season with salt and pepper. Serve hot, topped with chopped chives.
