Lebanese Falafel Recipe

Ingredients
1 cup dried chickpeas
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh coriander, chopped
1 teaspoon ground cumin
1 teaspoon baking powder
Salt to taste
Oil for frying
Pita bread for serving

Method
1. Soak the chickpeas in water overnight. Drain them afterward and place in a blender.
2. Add the chopped onion, minced garlic, chopped parsley, and coriander to the blender. Blend until you get a coarse mixture.
3. Mix in the cumin, baking powder, and salt. Stir everything until combined.
4. Heat oil in a deep pan over medium heat. Shape the chickpea mixture into small balls or patties.
5. Fry the falafel in hot oil until golden brown, about 3-4 minutes on each side. Remove and drain on paper towel.
