Ingredients

– 1 kg lamb, cut into chunks
– 1 onion, chopped
– 3 cloves garlic, minced
– 2 carrots, sliced
– 400 g canned tomatoes
– 2 cups chicken or vegetable broth
– 1 tablespoon ground cumin
– 1 tablespoon ground coriander
– 1 teaspoon cinnamon
– Salt and pepper to taste

Method

1. Begin by heating some oil in a large pot or tagine. Add the onion and cook until soft.
2. Stir in the garlic, carrots, cumin, coriander, and cinnamon. Cook for a few minutes until fragrant.
3. Add the lamb pieces to the pot. Sear them until brown on all sides.
4. Pour in the canned tomatoes and broth. Season with salt and pepper. Bring to a boil, then reduce heat.
5. Cover the pot and let it simmer for about 1.5 hours or until the lamb is tender.
