Kookoo Sabzi: Persian Herb Egg Bake
Ingredients
6 large eggs
100 ml olive oil
200 g fresh parsley, chopped
100 g fresh dill, chopped
50 g fresh coriander, chopped
1 tsp turmeric
1 tsp baking powder
Salt, to taste
Black pepper, to taste
200 g walnuts, chopped
Method
1. Preheat your oven to 180°C.
2. In a large bowl, beat the eggs until well mixed. Stir in the olive oil and add the turmeric, baking powder, salt, and black pepper.
3. Mix in the chopped parsley, dill, coriander, and walnuts.
4. Grease a baking dish with a little olive oil. Pour the egg mixture into the dish and spread it evenly.
5. Bake for about 30 to 35 minutes, until the top is golden brown and set.
