Ingredients
- 500 g pork, cut into cubes
- 2 cups water
- 2 medium tomatoes, chopped
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup vegetables (such as eggplant, string beans, or carrots)
- 2 tablespoons cooking oil
Method
- Heat the oil in a pot over medium heat. Sauté the garlic and onion until fragrant.
- Add the chopped tomatoes and continue cooking until they soften.
- Stir in the pork and cook until it is browned on all sides.
- Add water, fish sauce, salt, and pepper. Let this simmer until the pork becomes tender.
- Mix in the vegetables and cook for another 5 to 10 minutes until they are done. Serve hot with rice.
