Ingredients

– 200 g okra, cut into pieces
– 1 medium onion, finely chopped
– 1 medium tomato, chopped
– 2 cups coconut milk
– 1 tablespoon ginger, minced
– 2 green chilies, slit
– 1 teaspoon mustard seeds
– 1 teaspoon turmeric powder
– Salt to taste
– 2 tablespoons oil

Method

1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
2. Next, add the chopped onions and sauté until they turn translucent.
3. Stir in the ginger and green chilies, then cook for another minute.
4. Add okra and turmeric powder, mixing well. Cook for a few minutes until the okra softens.
5. Pour in the coconut milk, add chopped tomatoes, and season with salt. Simmer for about 10 minutes.
