Olan: Kerala Special Black Eyed Peas Curry

Ingredients
– 1 cup black-eyed peas
– 1 medium onion, finely chopped
– 1 medium tomato, chopped
– 1 cup coconut milk
– 1 teaspoon mustard seeds
– 2-3 green chilies, slit
– 1 tablespoon vegetable oil
– Salt, to taste
– Fresh curry leaves
– 1 teaspoon turmeric powder

Method
1. First, rinse black-eyed peas thoroughly and soak them in water for about 4 hours or overnight.
2. Heat vegetable oil in a pot over medium heat. Add mustard seeds and let them pop.
3. Next, add the chopped onion and sauté until it becomes soft. Stir in the chopped tomato, green chilies, and turmeric powder. Cook for a few minutes until the tomatoes turn soft.
4. Drain the soaked peas and add them to the pot. Pour in the coconut milk and add salt as desired. Allow it to simmer until the peas are tender, about 20-30 minutes.
5. Finally, add fresh curry leaves, mix well, and cook for another 5 minutes. Serve warm with rice.
