Kashmiri Al Yakhni Recipe: Bottle Gourd in Yogurt Gravy

Ingredients
300 g bottle gourd, peeled and chopped
3 cups water
1/2 teaspoon salt
1 cup plain yogurt
1/2 teaspoon cumin seeds
1 teaspoon ginger paste
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
2 tablespoons cooking oil
Fresh coriander, for garnish

Method
1. Start by boiling the chopped bottle gourd in water with salt until it becomes soft. This takes about 10-12 minutes.
2. While the bottle gourd is cooking, whisk the yogurt in a bowl until smooth. Set it aside.
3. In a separate pan, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
4. Mix in ginger paste, turmeric powder, and garam masala. Stir the mixture for about a minute to combine the flavors.
5. Add the boiled bottle gourd to the pan along with some of the cooking water. Lower the heat and carefully stir in the yogurt. Cook for another 5-7 minutes. Garnish with fresh coriander.
