Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 carrot, diced
– 1 potato, peeled and diced
– 950 ml vegetable broth
– 200 g kale, chopped
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 tablespoon lemon juice
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and cook for about 5 minutes until soft.
3. Stir in the garlic, carrot, and potato; cook for another 5 minutes.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat, then simmer for 15 minutes until the vegetables are tender.
5. Add the kale, salt, pepper, and lemon juice. Cook for 5 more minutes until the kale wilts.
