Ingredients
– 500 g pumpkin, peeled and diced
– 2 tablespoons oil
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– Salt to taste
– 1 tablespoon ginger, grated
– 1 tablespoon coriander leaves, chopped
– 2 tablespoons water
Method
1. Heat oil in a large pan over medium heat.
2. Add cumin and mustard seeds. Let them splutter for a few seconds.
3. Stir in turmeric powder, red chili powder, and salt. Mix well.
4. Add diced pumpkin and grated ginger to the pan. Combine everything together.
5. Pour in the water, cover, and cook for about 15 minutes until pumpkin is tender. Top with freshly chopped coriander leaves before serving.
