Ingredients
– 500 g pumpkin, peeled and diced
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon salt
– 1 tablespoon grated ginger
– 1 tablespoon chopped coriander leaves
– 2 cups water
Method
1. Heat oil in a pan over medium heat.
2. Add mustard seeds and cumin seeds. Sauté until they start to splutter.
3. Stir in turmeric powder, red chili powder, and salt. Mix well.
4. Add diced pumpkin and grated ginger. Combine, then pour in water.
5. Cook on medium heat until the pumpkin is tender. Garnish with chopped coriander leaves.
