Delicious Kadai Egg Masala Recipe: Spicy Indian Egg Curry

Ingredients

  • 4 eggs
  • 2 tablespoons of oil
  • 1 teaspoon of cumin seeds
  • 1 onion, chopped
  • 1 green chili, sliced
  • 1 teaspoon of ginger-garlic paste
  • 1 tomato, chopped
  • 1 teaspoon of garam masala
  • Salt to taste
  • Fresh coriander leaves, for garnish

Method

1. Boil the eggs in water for about 10 minutes. Once cooked, cool them under cold water and peel the shells off.
2. Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
3. Place the chopped onion and sliced green chili in the pan. Sauté until the onion becomes soft and translucent.
4. Stir in the ginger-garlic paste and chopped tomato. Cook until the tomato breaks down and the mixture thickens.
5. Add the boiled eggs to the pan along with garam masala and salt. Gently mix everything together and cook for a couple of minutes. Garnish with fresh coriander leaves.
