Method
1. Start by preheating your oven to 200 degrees Celsius.
2. Combine cherry tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper in a large bowl.
3. Spread this mixture onto a baking sheet and roast for 15 to 20 minutes, until the tomatoes are soft.
4. While the tomatoes roast, toast the baguette slices in the oven until they are golden brown.
5. Serve the roasted tomatoes on toasted baguette slices, topped with cheese and optional avocado.
