Method
1. Begin by preheating the oven to 200 degrees Celsius.
2. Cut the chicken breasts into bite-sized pieces. In a bowl, mix chicken with olive oil, garlic powder, paprika, salt, and black pepper.
3. Spread the seasoned chicken on a baking tray. Add the sliced zucchini, red bell pepper, and cherry tomatoes to the tray.
4. Roast everything in the oven for about 20-25 minutes until the chicken is thoroughly cooked.
5. Serve the roasted chicken and vegetables over the cooked quinoa.
