Ingredients
500g chicken thighs
200g bacon, diced
300ml red wine
500ml chicken stock
2 cloves garlic, minced
1 onion, chopped
2 carrots, peeled and sliced
1 tablespoon flour
2 tablespoons olive oil
Fresh thyme, a few sprigs
Method
Heat olive oil in a large pot over medium heat. Add bacon and cook until crispy.
Stir in onions, garlic, and carrots. Sauté for about 5 minutes until the vegetables soften.
Dust flour over the mixture and stir well. Pour in the red wine and chicken stock, then bring to a simmer.
Add chicken thighs and fresh thyme. Cover and cook for 40 minutes on low heat.
Uncover and continue cooking for an additional 10 minutes to thicken the sauce.
