Ingredients

– 500 g broccoli florets
– 1 cup chickpeas, rinsed and drained
– 1/2 cup red onion, finely chopped
– 1/2 cup almonds, sliced

– 1/2 tsp black pepper

– 1/4 cup lemon juice
– 2 tsp Dijon mustard
– 1/2 cup feta cheese, crumbled

Method

1. Start by bringing a large pot of water to a boil. Add the broccoli florets and cook for 2 minutes until bright green.
2. Drain the broccoli and rinse it under cold water to stop the cooking process. Set aside to cool completely.
3. In a large mixing bowl, combine chickpeas, red onion, almonds, salt, and black pepper.
4. Whisk together olive oil, lemon juice, and Dijon mustard in a separate bowl. Pour this dressing over the chickpea mixture and toss to coat.
5. Gently mix in the cooled broccoli and feta cheese. Serve immediately or refrigerate before serving.
