Jamaican Curry Chicken Recipe
Ingredients
– 1 kg chicken pieces, skinless
– 2 tablespoons curry powder
– 1 tablespoon all-purpose seasoning
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 tablespoon ginger, grated
– 400 ml coconut milk
– 1 red bell pepper, chopped
– 2 cups chicken broth
– 2 tablespoons vegetable oil
Method
1. Start by seasoning the chicken with curry powder and all-purpose seasoning. Make sure each piece is coated well.
2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and grated ginger. Sauté until fragrant and the onion becomes translucent.
3. Toss in the seasoned chicken and cook for about 5 minutes until it gets a bit browned. Stir occasionally.
4. Pour in the coconut milk and chicken broth. Mix in the chopped red bell pepper. Bring the mixture to a gentle boil.
5. Cover the pot and let it simmer on low heat for around 30 minutes. Stir occasionally until the chicken is fully cooked and tender.
