Ingredients
500 g Italian sausage
1 medium onion, chopped
2 cloves garlic, minced
1 carrot, diced
2 celery stalks, diced
200 g barley
1.5 L chicken broth
400 g diced tomatoes
1 tsp dried oregano
Salt and pepper to taste
Method
1. Heat a large pot over medium heat. Add the sausage and cook until browned. Use a wooden spoon to break up the sausage as it cooks.
2. Once the sausage is cooked, add the onion, garlic, carrot, and celery. Stir and continue to cook until the vegetables are soft.
3. Stir in the barley, chicken broth, diced tomatoes, and oregano. Bring the mixture to a boil.
4. Reduce the heat and let it simmer for about 45 minutes. Stir occasionally, adding more broth or water if it gets too thick.
5. Season with salt and pepper before serving. Enjoy the stew warm.
