Ingredients
– 2 cups lentils

– 8 cups vegetable broth
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, celery, and garlic. Cook until the vegetables become soft.
3. Stir in sliced sausages and cook until they start to brown.
4. Pour in diced tomatoes, lentils, Italian herbs, and vegetable broth. Bring to a boil.
5. Reduce heat and let the soup simmer for about 30 minutes, or until lentils are tender.
