Ingredients
– 250 g ricotta cheese
– 1 cup sugar
– 3 large eggs
– 1 lemon (juice and zest)
– 1 cup all-purpose flour
– 1 tsp baking powder
– 1/2 cup milk
– 1/3 cup vegetable oil
– 1 tsp vanilla extract
– Icing sugar (for dusting)
Method
1. Preheat your oven to 180°C. Prepare a cake pan by greasing it lightly.
2. In a bowl, mix the ricotta cheese and sugar until smooth.
3. Add the eggs one at a time, stirring well after each addition.
4. Combine the lemon juice and zest, flour, baking powder, milk, vegetable oil, and vanilla extract. Mix everything until just combined.
5. Pour the batter into the prepared cake pan. Bake for about 45 minutes or until golden and a skewer comes out clean. Dust with icing sugar before serving.
