Ingredients
– 1 cup of farro
– 2 cups of vegetable broth
– 1 cup of cherry tomatoes, halved
– 1 cucumber, diced
– 1 bell pepper, diced
– 1/4 cup of red onion, finely chopped
– 1/4 cup of fresh parsley, chopped
– 3 tablespoons of olive oil
– 2 tablespoons of balsamic vinegar
– Salt and pepper to taste
Method
1. Start by rinsing the farro in cold water.
2. Combine the farro and vegetable broth in a pot and bring to a boil.
3. Lower the heat, cover, and let it simmer for 25 minutes until tender.
4. Once cooked, drain any excess liquid and let it cool.
5. In a large bowl, mix the farro with tomatoes, cucumber, bell pepper, onion, parsley, olive oil, balsamic vinegar, salt, and pepper.
