Ingredients
– 1 cup cherry tomatoes, halved
– 1 red capsicum, diced
– 1 cucumber, diced
– 1 can chickpeas, rinsed and drained
– 150 g salami, chopped
– 150 g mozzarella, cubed
– 1/4 cup fresh parsley, chopped
– 1/4 cup olive oil
– 2 tablespoons red wine vinegar
– Salt and pepper to taste
Method
1. Start by preparing all the vegetables. Halve the cherry tomatoes, dice the red capsicum and cucumber, and chop the parsley.
2. Combine the prepared vegetables, chickpeas, salami, and mozzarella in a large bowl.
3. Whisk together the olive oil, red wine vinegar, salt, and pepper.
4. Pour the dressing over the salad mixture and toss everything gently to coat.
5. Serve immediately or chill in the fridge for up to an hour before serving.
