Ingredients

2 large eggplants
1 cup all-purpose flour
2 large eggs
2 cups breadcrumbs
2 cups tomato sauce
2 cups grated Parmesan cheese
1 tablespoon dried oregano
1 tablespoon olive oil
Salt, to taste
Pepper, to taste

Method

Start by preheating the oven to 190 degrees Celsius.

Slice the eggplants into half-centimeter thick rounds and sprinkle with salt. Allow them to sit for about 30 minutes.

Rinse the eggplant slices under water to remove the excess salt, then pat them dry with a paper towel.

Dredge each slice in flour, dip it in beaten eggs, and coat with breadcrumbs. Fry the slices in olive oil until they turn golden brown on both sides.

In a baking dish, layer the fried eggplant, tomato sauce, oregano, and Parmesan cheese. Repeat the layers until all ingredients are used. Bake for about 30 minutes until bubbling and golden on top.
