Ingredients
– 200 g almond meal
– 100 g unsalted butter, softened
– 100 g sugar
– 3 large eggs
– 1 tsp vanilla extract
– 1 tsp baking powder
– 50 g shelled pistachios, chopped
– 60 ml milk
– 1 pinch of salt
– Icing sugar, for dusting
Method
1. Start by preheating the oven to 180°C (350°F). Grease a round cake pan with butter and line the bottom with baking paper.
2. In a large bowl, mix the softened butter and sugar together until the mixture is light and fluffy.
3. Next, beat in the eggs one at a time, then add the vanilla extract. Stir until everything is well combined.
4. Add the almond meal, baking powder, chopped pistachios, milk, and a pinch of salt. Mix until smooth.
5. Pour the batter into the prepared cake pan. Bake in the oven for about 30-35 minutes, or until a toothpick comes out clean. Allow to cool before dusting with icing sugar.
