Ingredients
– 1 tbsp olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 zucchini, diced
– 1 can (400 g) diced tomatoes
– 1 tsp Italian seasoning
– 4 cups vegetable broth
– 300 g tortellini
– 2 cups spinach
Method
1. Start by heating the olive oil in an instant pot on the sauté setting.
2. Add the chopped onion and minced garlic. Cook until the onion turns soft.
3. Toss in the diced carrot and zucchini. Stir for a few minutes.
4. Pour in the diced tomatoes, Italian seasoning, and vegetable broth. Mix well.
5. Stir in the tortellini. Lock the lid and cook on high pressure for 3 minutes. Release the pressure, then add the spinach before serving.
