Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 celery stalk, diced
– 1 can (400 g) diced tomatoes
– 1 liter vegetable broth
– 250 g fresh tortellini
– 2 cups spinach
– Salt and pepper to taste
Method
1. Heat the olive oil in the Instant Pot using the sauté function.
2. Add the onion, garlic, carrot, and celery. Cook until they soften, stirring occasionally.
3. Pour in the diced tomatoes and vegetable broth. Stir well and add salt and pepper.
4. Seal the lid and cook on high pressure for 5 minutes. Release the pressure when done.
5. Open the lid and stir in the tortellini and spinach. Let it sit for a few minutes until the tortellini is heated through.
