Ingredients
– 1 whole chicken (about 1.5 kg)
– 2 tablespoons vegetable oil
– 1 tablespoon fresh ginger, grated
– 2 garlic cloves, minced
– 1 tablespoon ground coriander
– 1 tablespoon ground cumin
– 1 tablespoon paprika
– 1 teaspoon turmeric
– 1 teaspoon salt
– Juice of 1 lemon
Method
1. Preheat your oven to 200°C (390°F).
2. In a bowl, mix together the vegetable oil, ginger, garlic, coriander, cumin, paprika, turmeric, salt, and lemon juice.
3. Rub this mixture all over the chicken, making sure to cover it well, even inside the cavity.
4. Place the chicken in a roasting pan and roast for about 1 hour or until the chicken is browned and cooked through.
5. Let the chicken rest for 10 minutes before carving and serving.
