Hyderabadi Bagare Tamatar (Spiced Tossed Tomato Curry)

Ingredients
4 large ripe tomatoes, chopped
1 small onion, finely chopped
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon tamarind pulp
2 cups water
Salt to taste

Method
Heat oil in a pan over medium heat.
Add mustard seeds and cumin seeds; let them sizzle for a few seconds.
Stir in the chopped onion and cook until golden brown.
Mix in the turmeric powder, red chili powder, and salt, then add chopped tomatoes.
Pour in water and tamarind pulp, cooking until the tomatoes are soft and the mixture thickens.
