Ingredients
– 500 g baby carrots
– 3 tbsp honey
– 2 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1 tsp garlic powder
– 1 tbsp fresh thyme (or 1 tsp dried thyme)
– Juice of 1 lemon
Method
1. Preheat the oven to 200°C (400°F).
2. In a large bowl, mix together honey, olive oil, salt, pepper, garlic powder, thyme, and lemon juice.
3. Add the baby carrots to the bowl and toss until they are well coated with the mixture.
4. Arrange the carrots on a baking tray lined with baking paper, spreading them out evenly.
5. Roast in the oven for about 25 to 30 minutes, or until they are tender and caramelized.
