Ingredients
– 4 medium potatoes
– 2 cloves garlic
– ½ cup olive oil
– 2 tablespoons red wine vinegar
– 1 teaspoon lemon juice
– ½ teaspoon salt
– ½ teaspoon black pepper
– ¼ cup water
– Fresh parsley (for garnish)
– Crusty bread (for serving)
Method
1. Peel and chop the potatoes into small pieces. Place them in a pot and cover with water.
2. Boil the potatoes for about 15-20 minutes until they are soft. Drain the water and let them cool down.
3. In a bowl, mash the cooled potatoes with a fork. Add minced garlic, olive oil, vinegar, lemon juice, salt, and pepper. Mix until smooth.
4. Gradually add water to adjust the consistency. Keep mixing until it is creamy but thick.
5. Serve the skordalia with crusty bread and sprinkle some fresh parsley on top.
