Ingredients
– 4 medium potatoes
– 2 cloves garlic
– 1 cup extra virgin olive oil
– 2 tablespoons white wine vinegar
– 1 teaspoon salt
– 1/2 teaspoon pepper
– Fresh parsley (for garnish)
– Lemon juice (to taste)
– Water (if needed)
Method
1. Peel and cut the potatoes into chunks. Place them in a pot of cold water and bring to a boil. Cook until soft, about 15 minutes.
2. Drain the potatoes and let them cool slightly.
3. In a bowl, mash the potatoes with a fork or a potato masher until smooth.
4. Add minced garlic, olive oil, vinegar, salt, and pepper. Stir until everything is well combined.
5. If the mixture is too thick, add a little water to reach the desired consistency. Adjust seasoning with lemon juice and garnish with parsley.
