Ingredients
– 4 English muffins
– 4 large eggs
– 250 g sausage meat
– 4 slices cheese
– 1 tbsp olive oil
– Salt and pepper to taste
– Optional: hot sauce or ketchup
Method
1. Start by preheating a non-stick skillet over medium heat. Add olive oil when hot.
2. Shape sausage meat into four flat patties and place them in the skillet. Cook for about 4 minutes on each side until they are browned and cooked through.
3. While the sausage patties are cooking, split and toast the English muffins until golden brown.
4. Once the sausage is done, crack one egg into the same skillet for each sandwich. Cook the eggs sunny side up, seasoning with salt and pepper. Cook for about 2-3 minutes until the whites are set.
5. Assemble each sandwich by placing a sausage patty on a muffin half, topping it with an egg and a slice of cheese. Add hot sauce or ketchup if desired. Top with the other muffin half.
