Ingredients
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 2 packets of instant ramen noodles
- 1 tablespoon sesame oil
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 cup baby spinach
- 2 green onions, chopped
- 2 teaspoons grated ginger
- Soft-boiled eggs, for serving (optional)
Method
- In a large pot, bring the vegetable broth to a boil over medium-high heat.
- Add soy sauce, sesame oil, and ginger to the boiling broth. Stir well.
- Mix in the sliced mushrooms and cook for about 3 minutes until softened.
- Add the ramen noodles and cook according to package instructions, usually about 3 minutes.
- Toss in bok choy and spinach. Remove from heat after 1 minute and serve with chopped green onions and soft-boiled eggs if desired.
