  • 4 cups vegetable broth

  • 2 packets of instant ramen noodles

  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 teaspoons grated ginger
  • Soft-boiled eggs, for serving (optional)

Method

  1. In a large pot, bring the vegetable broth to a boil over medium-high heat.
  2. Add soy sauce, sesame oil, and ginger to the boiling broth. Stir well.
  3. Mix in the sliced mushrooms and cook for about 3 minutes until softened.
  4. Add the ramen noodles and cook according to package instructions, usually about 3 minutes.
  5. Toss in bok choy and spinach. Remove from heat after 1 minute and serve with chopped green onions and soft-boiled eggs if desired.
