Ingredients
– 8 bright lemons
– 750 ml vodka
– 300 g sugar
– 300 ml water
– Zest of 8 lemons
Method
1. Start by washing the lemons well. Use a peeler to remove the zest from the lemons, avoiding the white pith.
2. Place the lemon zest into a large glass jar and pour in the vodka. Seal the jar and let it sit in a cool, dark place for about 7 days.
3. After a week, combine sugar and water in a saucepan. Heat on medium until the sugar dissolves completely. Let it cool.
4. Strain the lemon vodka mixture into a large bowl, discarding the zest. Mix the cool sugar syrup into the strained vodka.
5. Pour the limoncello into clean bottles. Seal them and store in the fridge or freezer until serving.
