Ingredients
200g digestive biscuits (or similar)
75g unsweetened cocoa powder
100g unsalted butter, melted
200g powdered sugar
2 large eggs
1 tsp vanilla extract
1 tsp baking powder
250g orange marmalade
200g dark chocolate, chopped
1 tbsp vegetable oil
Method
1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
2. Crush the digestive biscuits into fine crumbs. Mix the crumbs with melted butter, cocoa powder, and half the powdered sugar in a bowl.
3. In a separate bowl, beat the eggs with vanilla extract, baking powder, and the remaining powdered sugar. Combine both mixtures until thoroughly blended.
4. Pour this batter into the prepared tray. Smooth out the top and bake for 20-25 minutes until firm. Allow to cool completely.
5. Once cooled, spread a thick layer of orange marmalade on top. Melt the dark chocolate with vegetable oil and drizzle it over the marmalade. Let the chocolate set before cutting into squares.
