Ingredients
– 4 medium potatoes
– 1 small onion
– 60 ml olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp paprika
– 1/4 cup plain flour
– 1 egg
– 1 tbsp fresh parsley (optional)
– Sour cream (for serving)
Method
1. Peel the potatoes and grate them using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible.
2. Finely chop the onion and combine it with the grated potatoes in a mixing bowl.
3. Add the salt, black pepper, paprika, flour, and beaten egg to the potato mixture. Stir everything until well combined.
4. Heat the olive oil in a large pan over medium heat. Once hot, spoon the potato mixture into the pan and flatten them with a spatula.
5. Cook for about 5 minutes on each side, or until golden brown and crispy. Serve hot with a dollop of sour cream on the side.
