Ingredients
– 4 eggs
– 2 whole English muffins
– 4 slices of ham
– 250 ml water
– 50 ml vinegar
– 100 g butter
– 2 egg yolks
– 1 tablespoon lemon juice
– Salt, to taste
– Pepper, to taste
Method
1. Start by filling a medium saucepan with water and adding vinegar. Heat it until boiling.
2. Split English muffins in half and toast them until golden. Place a slice of ham on each muffin half.
3. Once the water is boiling, gently crack an egg into a small bowl before sliding it into the water. Repeat with the remaining eggs. Cook for about 2-3 minutes for a runny yolk.
4. In a separate bowl, whisk together egg yolks and lemon juice. Melt butter in a pan, then slowly pour it into the egg mixture while whisking. Add salt and pepper to taste.
5. Assemble by placing poached eggs on top of the ham and muffins. Drizzle the hollandaise sauce on top.
