Delicious Homemade Chicken Pot Pies: Easy Recipe & Tips

Ingredients

– 500 g chicken breast, diced
– 1 medium onion, chopped
– 2 carrots, sliced
– 2 cups frozen peas
– 4 cups chicken stock
– 60 g butter
– 60 g plain flour
– 1 teaspoon salt
– 1 teaspoon black pepper
– 2 sheets puff pastry

Method

1. Preheat the oven to 200°C.
2. Melt the butter in a large saucepan over medium heat. Add the onion, cooking until it becomes soft.
3. Stir in the chicken and cook until browned. Then add carrots, frozen peas, chicken stock, salt, and pepper. Simmer for about 10 minutes.
4. To thicken, whisk in the flour and let the mixture cook for another 5 minutes. Remove from heat and cool slightly.
5. Spoon the filling into a pie dish. Cover with puff pastry and cut a few slits in the top. Bake for 30-35 minutes or until golden brown.
