Ingredients
– 400 g pasta (any type you like)
– 250 g cherry tomatoes, halved
– 100 g feta cheese, crumbled
– 100 g spinach, roughly chopped
– 2 garlic cloves, minced
– 100 ml olive oil
– 50 g pesto sauce
– Salt, to taste
– Pepper, to taste
– 50 g pine nuts
Method
1. Cook the pasta according to the package instructions. Drain it and set aside to cool.
2. In a large bowl, mix together the cherry tomatoes, feta cheese, and spinach.
3. Add the minced garlic, olive oil, pesto sauce, salt, and pepper to the bowl. Stir well.
4. Once the pasta is cool, combine it with the salad ingredients. Mix everything together gently.
5. Toast the pine nuts in a dry pan over medium heat for a few minutes. Sprinkle them on top of the salad before serving.
