Ingredients
- 300 g pasta (any type)
- 1 cup basil pesto
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1 cup mozzarella balls
- 1/2 cup black olives, sliced
- 1/4 cup pine nuts
- Salt, to taste
- Pepper, to taste
- 1/4 cup fresh parsley, chopped
Method
- Cook the pasta according to package instructions until al dente. Drain and let it cool.
- In a large bowl, mix the cooled pasta with basil pesto.
- Add cherry tomatoes, cucumber, mozzarella, black olives, and pine nuts to the pasta mixture.
- Season with salt and pepper, then toss gently to combine all ingredients.
- Sprinkle fresh parsley on top before serving.
