Ingredients
– 4 duck thighs, skin on
– 2 tablespoons soy sauce
– 2 tablespoons hoisin sauce
– 1 tablespoon rice vinegar
– 1 tablespoon honey
– 1 cucumber, julienned
– 2 carrots, julienned
– 8 rice paper wrappers
– Fresh mint leaves
– 200 ml water
Method
1. Preheat the oven to 200°C. Season the duck thighs with salt and pepper.
2. Place the duck on a baking tray and roast for about 25-30 minutes until the skin is crispy.
3. Combine soy sauce, hoisin sauce, rice vinegar, and honey in a bowl. Once the duck is cooked, brush it with this mixture.
4. Soften rice paper wrappers in warm water for about 20 seconds. Place them on a flat surface.
5. Add slices of duck, cucumber, carrots, and mint onto each wrapper. Roll them tightly and serve.
