Delicious Healthy Sweet Potato Casserole Recipe For Fall

Ingredients

– 4 medium sweet potatoes (about 800g)
– 1/3 cup (80ml) maple syrup
– 2 tbsp (30ml) unsalted butter, melted
– 1/4 tsp ground cinnamon
– 1/4 tsp salt
– 1/2 cup (50g) finely chopped pecans
– 1/2 cup (50g) rolled oats
– 3 tbsp (45ml) almond milk or milk of choice
– 1 tsp vanilla extract
– 1/4 tsp nutmeg

Method

1. Preheat your oven to 190°C. Grease a baking dish with a little butter or oil.
2. Peel and chop the sweet potatoes into smaller pieces. Boil them in a pot of water until soft, about 15-20 minutes.
3. Drain the sweet potatoes and mash them in a bowl. Mix in maple syrup, melted butter, cinnamon, salt, vanilla extract, and nutmeg.
4. In another bowl, combine pecans, oats, and almond milk. Spread this mixture on top of the sweet potato mix in the baking dish.
5. Bake for 25-30 minutes until the topping is golden brown. Let it cool for a few minutes before serving.
