Ingredients
– 800 g sweet potatoes
– 60 ml maple syrup
– 50 g butter
– 1 teaspoon vanilla extract
– 2 teaspoons pumpkin spice
– 150 g pecans, chopped
– 250 g plain Greek yogurt
– 2 tablespoons brown sugar
– 1/2 teaspoon salt
– 2 eggs
Method
1. Preheat the oven to 180°C. Peel and chop the sweet potatoes into smaller pieces and boil them in water until they’re soft.
2. Drain the sweet potatoes and mash them in a bowl. Mix in maple syrup, butter, vanilla, salt, and pumpkin spice until combined.
3. In another bowl, beat the eggs and add them to the sweet potato mixture. Stir until everything is nicely blended.
4. Pour the mixture into a baking dish and bake for about 30 minutes.
5. While it bakes, prepare the topping. Combine chopped pecans, brown sugar, and a bit of butter in a bowl. After 30 minutes, sprinkle this on top of the casserole and bake for another 10 minutes.
