Ingredients
– 4 medium sweet potatoes
– 1/4 cup milk
– 2 tablespoons maple syrup
– 1 teaspoon vanilla extract
– 1/2 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/2 cup oats
– 1/4 cup chopped pecans
– 2 tablespoons melted butter
– Pinch of salt
Method
1. Preheat the oven to 180°C (350°F).
2. Peel and chop the sweet potatoes into small pieces. Boil in water for about 15-20 minutes or until soft.
3. Drain sweet potatoes and mash them in a bowl. Stir in milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
4. Transfer the sweet potato mixture to a baking dish. Mix oats, pecans, melted butter, and a pinch of salt in a small bowl, then sprinkle over the top.
5. Bake for 25-30 minutes until golden brown on top.
