Ingredients

– 1 cup mashed banana (about 2 ripe bananas)
– 1/2 cup natural peanut butter (or another nut butter)
– 1/4 cup honey or maple syrup
– 1 cup rolled oats
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup chocolate chips or dried fruit (optional)
– 1/2 cup chopped nuts (optional)
– 1/2 teaspoon cinnamon (optional)

Method

1. Preheat your oven to 180 degrees Celsius and line a baking tray with baking paper.
2. In a large bowl, mix together the mashed bananas, peanut butter, and honey or maple syrup until smooth.
3. Stir in rolled oats, vanilla extract, baking soda, and salt. Add in chocolate chips, nuts, or cinnamon if you like.
4. Scoop tablespoon-sized amounts of the dough onto the baking tray, placing them a few centimeters apart.
5. Bake for 10-12 minutes, or until the cookies are golden brown. Let them cool for a few minutes before enjoying.
