Ingredients
– 3 ripe bananas, mashed
– 1/3 cup melted coconut oil or vegetable oil
– 1/2 cup brown sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1 teaspoon cinnamon
– 1 1/2 cups whole wheat flour
– 1/2 cup chopped nuts or chocolate chips (optional)
Method
1. Preheat the oven to 175°C. Grease a loaf pan or line it with baking paper.
2. In a mixing bowl, combine the mashed bananas and oil. Stir until well mixed.
3. Add the brown sugar, egg, and vanilla extract. Mix everything until smooth.
4. Sprinkle in the baking soda, salt, and cinnamon. Add the flour and mix until combined.
5. Fold in nuts or chocolate chips if using. Pour the batter into the prepared pan and bake for 50-60 minutes.
