Ingredients

– 125 g hazelnuts
– 250 g unsalted butter, softened
– ¾ cup icing sugar
– 2 cups plain flour
– 1 tsp vanilla extract
– ¼ tsp salt
– 1 egg yolk
– ½ cup dark chocolate, melted
– Sprinkles for decoration
– Edible glitter (optional)

Method

1. Preheat the oven to 160°C. Line a baking tray with baking paper.
2. Grind the hazelnuts in a food processor until fine. Mix the ground nuts with butter and icing sugar in a bowl until smooth.
3. Stir in the plain flour, vanilla, salt, and egg yolk until combined. The mixture should form a dough.
4. Shape the dough into wreaths on the baking tray. Use your finger to make a hole in the center of each one.
5. Bake for 15-20 minutes or until lightly golden. Cool the cookies, then drizzle melted chocolate on top and add sprinkles or glitter.
