Hawaij Lentil Soup Recipe
Ingredients
1 cup dried brown lentils
1 large onion, chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 tablespoon hawaij spice mix
1 can (400 ml) diced tomatoes
6 cups vegetable broth
2 tablespoons olive oil
Salt and pepper, to taste
Method
1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for about 5 minutes until onions become soft.
2. Stir in minced garlic and hawaij spice mix. Cook for another minute, allowing the spices to release their aroma.
3. Add lentils, diced tomatoes, and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low.
4. Let the soup simmer for 30-35 minutes until lentils are tender. Stir occasionally and add salt and pepper to taste.
5. Remove from heat and serve warm. Enjoy this hearty lentil soup with bread or on its own.
