Ingredients
– 1 cup lentils
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 carrot, chopped
– 1 celery stalk, chopped
– 1 tablespoon ground cumin
– 1 tablespoon ground coriander
– 1 teaspoon turmeric
– 1.5 liters vegetable broth
– Salt and pepper to taste
Method
1. Rinse the lentils under cold water in a strainer.
2. Heat a large pot over medium heat and add some oil. Sauté the onion, carrot, and celery until they’re soft.
3. Stir in the garlic along with the cumin, coriander, and turmeric. Cook for about a minute until the spices are fragrant.
4. Pour in the vegetable broth and add the lentils. Bring to a boil, then reduce the heat to a simmer.
5. Cook for about 30 minutes or until the lentils are tender. Season with salt and pepper before serving.
